Hanukkah is almost over, but there's still time to enjoy a batch of handmade latkes to celebrate.

Also known as potato pancakes, eating latkes is a tradition during the Jewish holiday of Hanukkah. They serve as a reminder of the miracle of oil burning for eight days, as well as perseverance that took place in 164 BCE.

There are tons of different varieties, but below is a classic, easy recipe for crispy latkes that my family uses.
