I would assume the name says it all, my co-worker Josh and I (he loves to cook) were trying to come up with a way to perfect another recipe I have done and this is what we decided would work best. And with a tube of biscuits and crescent rolls in my fridge, I almost wanted to wrap them, which I may still do. :)

Jalapeno Popper Meatballs

HERE'S WHAT YOU'LL NEED:

1 lb of hamburger (if you want to get crazy do half hamburger and half ground chorizo), 1 pkg of taco seasoning, 1 small onion (finely diced), 1 piece of white bread soaked in milk, 6 fresh jalapenos and half a pkg of cream cheese

PUTTING IT ALL TOGETHER:

In a medium sized bowl mix together the hamburger or blend of hamburger and chorizo with the taco seasoning packet, add the onions and the piece of bread. Toss with your finger tips as you don't want to overwork the meat. Let mixture sit at room temperature while you prepare the jalapenos. Cut them in half, scrap out the membrane and remove the seeds (unless you're into extra spicy) stuff each half with cream cheese (just enough to fill the center). Now, take a handful of hamburger, gently flatten it in the palm of your hand and place a jalapeno half in the center, wrap the meat around the jalapeno to form a ball and repeat.

Bake them on a baking sheet at 400 for about 15 minutes.
