Quick, Easy and Healthy, sign me up. Oh don't get me wrong you know that I love me a big old plate of mashed taters and a medium-rare steak, but on the other days, it's time to eat healthy. And seriously, it doesn't sound like this will taste "healthy".
WHAT YOU'LL NEED:
4 Boneless Skinless Chicken Breast(s), 2 Green Onions (chopped), 2 Jalapenos (chopped fine with seeds), 1/2 cup soy sauce (can use low sodium), 1 Tbsp Garlic Chili Sauce, 1/4 Cup Rice Wine Vinegar, Garlic Salt, Pepper and Sriracha to taste. Mix all together and let chicken kick back in this flavorful bath for a while.
Meanwhile make the sauce...
Equal parts Soy Sauce and Rice Vinegar, 1 Jalapeno, 2 Green Onions (diced), 1 Roma Tomato (diced), 1 tsp Garlic Chili Sauce, 1 tsp Sugar, Sriracha, Mix all together and put in container with a spout.
PUTTING IT ALL TOGETHER:
Cook the chicken mix over high heat. When the chicken is almost cooked boil a bag of rice noodles for about four minutes.
Serve in lettuce wraps with the chicken, noodles and sauce
