Recipe Rescue: Chicken and Ham Casserole, Throw it in the Oven and Forget it
Making casseroles are just about as much fun as using the slow cooker, nothing like putting everything in a baking dish, throwing it in the oven and starting the laundry and soon homework help.
HERE'S WHAT YOU'LL NEED:
3 boneless/skinless chicken breasts (boiled, broiled or baked-no time, pick up a rotisserie chicken on the way home), 1/2 a pound of Black Forest Deli Ham (sliced thick and diced) 1/2 a stick of butter, 2 cans of cream of chicken soup, 1/2 cup of milk, 8 ounces of Swiss cheese, salt and pepper and a large bag of shredded hash browns
PUTTING IT ALL TOGETHER:
Chop the chicken in bite sized pieces, line a baking dish (spray the dish with cooking spray) with half of the hash browns. Top the hash browns with the chicken, ham and swiss cheese slices, now top with the other half of the bag of hash browns. Heat the soup, milk and butter in the microwave for 1 and a half minutes, or until they blend well, you don't want to overheat the milk. Pour the soup mixture over the hash browns and bake at 350 for 40-45 minutes
Yes, it's kind of like a chicken cordon blue casserole, enjoy! :)
