Some of the best ice cream in the country is *finally* making its way to the Centennial State in the form of a brick-and-mortar.

Van Leeuwen Ice Cream is opening its first-ever scoop shop in Colorado.

The ice cream shop - whose stores primarily reside on the East Coast will have a new home in Boulder, CO beginning Saturday, Aug. 6.

About Van Leeuwen

Like many growing businesses, Van Leeuwen Ice Cream started out small.

In 2008, Ben and Pete Van Leeuwen and Laura O’Neill took their business out to the busy streets of New York City and started by selling their delectable product out of a simple-looking yellow truck.

The mission then, and now? To make good ice cream - from good ingredients - that makes you feel good.

"If you can’t pronounce it you probably can’t digest it", the ice cream shop website reads.

"That’s why we are obsessed with exactly what goes into our ice cream and what stays out. This is true whether it’s classic ice cream. Or vegan. Or whatever we churn up next."

... and when it comes to churning up new flavors, you can expect Van Leeuwen's ice cream to be anything but your average.

I mean, remember the mac and cheese flavored ice cream that was going viral on the internet?

Yup, this... unique flavor was carefully and specially churned up by our friends at Van Leeuwen - and it's not the only unlikely ice cream flavor the shop's come out with.

Ever wanted to try mustard-flavored ice cream?

Van Leeuwen's got you covered.

I'll admit - I do love me some Grey Poupon, but in the form of ice cream?

All I can say is that I'm intrigued.

New Location, New Flavor

Van Leeuwen officials say the new Colorado-based shop intends to serve an exclusive limited-edition flavor at its Boulder store.

Dubbed Rocky Mountain Road (you probably don't need to guess where that name came from), the flavor will reportedly feature a green spruce ice cream base with a fudge swirl, marshmallows, candied pecans, and pistachios.

The ice cream is "inspired by the smell of pine and spruce warmed in the early morning summer sun, this unique flavor evokes moments of solitude in the mountains."

“We are so happy to bring Van Leeuwen to Colorado and serve good ice cream in one of the most beautiful places in the country. Selfishly, we cannot wait to hike off the scoops we’re going to be eating on Mount Sanitas,” said co-founder and CEO Ben Van Leeuwen, according to the Cañon City Daily Record.

To celebrate the ice cream shop's grand opening, Van Leeuwen will offer up $1 ice cream scoops from 1 p.m. to 11 p.m. on Saturday,  at 1750 29th Street #1304 in Boulder.

According to 9News, Van Leeuwen also plans to open a location in Denver later this year.
