I am one of those annoying types of people that make their own lyrics up in my head to suit whatever I am thinking about. For instance, Joan Jett's "I Love Rock 'n' Roll" fits this subject perfectly.

Once you've heard it in your head, you cannot unhear it. Sorry, not sorry. Why am I botching this iconic song and replacing rock 'n' roll with mac & cheese? I have a good reason as I Heart Mac & Cheese has opened a new location in Colorado and I am excited to try it.

The build-your-own macaroni and cheese chain features some amazing bowls like the Short Rib Philly Mac & Cheese or the Lobster and White Truffle Mac & Cheese. Other offerings that I Heart Mac & Cheese include grilled cheese, gluten-free, and vegan options.

Denver's newest I Heart Mac & Cheese location is the closest to Northern Colorado at 8801 East Montview Boulevard. This marks the second I Heart Mac & Cheese location in the state of Colorado. Two more locations are planned to open fall of 2023. Those locations include Castle Rock and Colorado Springs.

There are a ton of great options to choose from and you can even customize your mac & cheese to your liking with a "Make Your Own" bowl. However, these are the mac & cheese dishes that stood out the most to us:

Buffalo Blue Mac & Cheese

Chicken, Buffalo sauce, bleu cheese, celery, and carrots make this mac & cheese dish a must for any Buffalo Hot Wing lover.

Short Rib Philly Mac & Cheese

Slow-cooked short ribs, mushrooms, red onions, and Muenster cheese is bringing you the city of brotherly love in mac & cheese form.

Lobster Mac & Cheese

This would be my go-to dish as I love the combination of lobster with mac & cheese. This is going to be one of those "treat yourself" entrees as pretty much anything that contains lobster is going to be quite expensive. Worth it, but pricey.
