This Mexican restaurant is very popular among Coloradans in Fort Collins, Greeley, Johnstown, and Loveland, and nearly every time I drive past one of its Northern Colorado locations, it is slammed with people.

The first location opened in Fort Collins 20 years ago by Rick Krammer and David Hoffman. Chances are that you have eaten at Cafe Mexicali once or twice, so you totally understand the popularity behind the Northern Colorado-based chain.

While I was searching for more information on the Ledge Rock development in Johnstown, I was surprised to find quite a surprise. Cafe Mexicali will be opening another location in Johnstown.

The Ledge Rock Center site plan shows that the new location for Cafe Mexicali will be located in the same parking lot as Woods Supermarket and Murdoch's on the southeast side of the intersection of State Highway 60 and High Plains Boulevard.

Currently, there is no information as to when the newest location of Cafe Mexicali will open. However, we don't believe that it will be much more of a wait as the building is already completed.
