Who knew that you could get so creative with zucchini, okay, so everyone being that it grows so well in our gardens we have adapted to learning all kinds of ways to manipulate this wonderfully versatile veggie. Today, we are going simple and making spaghetti.

WHAT YOU'LL NEED:

3-4 Zucchini, olive oil, 3 garlic cloves(minced), 1 small onion(diced) and salt & pepper

PUTTING IT ALL TOGETHER:

Using a mandolin or rotary vegetable peeler create "noodles" from your zucchini. Peel the zucchini till you get to the part just before the seeds.

In a medium skillet cook the diced onions in olive oil, just before they are cooked till softened add the 3 cloves of garlic and cook for another minute. Add salt and pepper and serve with your favorite sauce and frozen packaged meatballs.
