It isn't that difficult or that ingenious, it's just off the hook. This easy summer salad is perfect for picnics, weekday lunches or teamed with chicken for an awesome dinner.

SUMMER SALAD, WHAT YOU'LL NEED:

1 or 2 avocado's (depends how crazy you are for them, I love them so go for 2 every time-chopped), 2 ears of corn (roasted on the grill or slowly over a low gas stove burner flame-don't forget to soak the corn in its husk for at least fifteen minutes and cook it in the husk too), 4 Roma tomatoes, 1 can of dark kidney beans, half a bunch of Cilantro (rough chopped) 1 cup of chopped red onion and 1 lime juiced over salad. You can top the salad with a light Italian dressing, olive oil or leave as is.

SUMMER SALAD, PUTTING IT ALL TOGETHER:

Add all of the ingredients, corn removed from the cob and mix well together. Create a 'manlier' meal by adding a grilled chicken breast seasoned with salt, pepper and lime. For extra texture, crumble a couple of tortilla chips over the top of the salad.
