Slow down the negative train... ground turkey is a good source of protein and is believed to be better for you than ground beef. Being married to a  Husker, I do eat my share of beef, but once in a while, I love to cook with ground turkey. Working with ground turkey is not as pleasant as working with ground beef, but far better than ground chicken. So roll up your sleeves and let's get cooking... this is yummy, trust me!

What You'll Need:

1 pkg unseasoned ground turkey
1 tsp each of basil, thyme, oregano,
rosemary, garlic and s/p
1 large egg
1/2 cup panko bread crumbs
1/2 cup three cheese Italian blend

1 large can of tomato puree
1 Tbsp olive oil
1 tsp each of basil, thyme, oregano,
rosemary, garlic and s/p

Putting It All Together:

As you know, I don't use pre made
sauces, the sodium contents can get
way too high and being a medicated
high blood pressure patient who was
diagnosed with hypertension 3 about
three years ago, it's really important
to maintain a healthy sodium intake.
So... break open the tomato puree and
put into a medium saucepan. Add the olive
oil and seasonings, plus mushrooms, onions
and some of the cheese if you like and
let simmer while you prepare and cook
the meatballs.

for the meatballs, mix the ground turkey
with the seasonings, egg and panko bread
crumbs. Remember not to over work the meat.
once the mixture is well blended, form
your meatballs. The size depends on you,
I usually make them about the size of
a hacky sack. brown them on all sides
in a medium skillet until juices run
clear. place them on a paper towel to
drain the grease and then add to your
sauce.

butter your baguette sections and brown
in your grease free meatball skillet, fill
with meatballs, top with cheese blend and
serve with salad.
