One of my favorite soups is broccoli cheese, but not always the lowest calorie choice.  This recipe will save about a third of the calories and I don't think that any of the flavor has been sacrificed. Let's get out those broccoli florets and let's get cooking!

What You'll Need:

16 0z frozen broccoli florets or
a couple of fresh bundles
4 cups low sodium chicken broth
1 cup half and half
1/2 up Velveeta light
1/2 cheddar cheese, shredded
s/p to taste

Putting It All Together:

in a dutch oven cook the broccoli
til tender in the chicken broth
use a hand potato masher to break
down the broccoli then add
the half and half, cook for another
3-5 minutes then add the cheeses
let simmer on low til dinner
