If your fridge looks anything like mine, it's time to get busy using up the items from Turkey day that you really don't know what to do with. Today, let's take that left over Queso and make it for dinner.

As an appetizer for Thanksgiving I made a simple http://www.ro-tel.com/recipes-RoTel-Famous-Queso-Dip-2693.html, Velveeta, RoTel and browned ground hamburger. But there is a good portion left over so here we go...

WHAT YOU'LL NEED:

Your left over queso, refried beans, Mexican blend shredded cheese and flour tortillas

PUTTING IT ALL TOGETHER:

Spray the bottom of a casserole dish. I like to "fire roast" my tortilla's, if you have a gas stove set it on low and just lightly brown each tortilla, you'll only need about 6. Start with two tortillas on the bottom, layer on some of the beans (you can use whole pinto beans too) top with some cheese (even Jalapenos if you'd like) another layer of tortillas, beans and this time your left over queso, top with two more tortillas and the rest of your shredded cheese (about 3/4 cups or more if you like it extra cheesy)

Tip: it's easier to deal with the refried beans and the queso if you warm slightly in the microwave.

Now bake at 325 for about 20 minutes or until the cheese is melted and starts to brown.
