Recipe Rescue: Gabi of Fort Collins Heats up Valentines Day With Rosemary Thyme Lamb Chops
Lamb chops are yummy, period! And Gabi’s recipe sounds sinful… let’s get cooking!

WHAT YOU’LL NEED:
2-3 Lamb Chops, 4 sprigs each of Rosemary and Thyme (if using dried Rosemary and Thyme use 4 tsp(s) of each), 1 Clove of Garlic, 4 Tbsp Spicy Brown Mustard, 4 Tbsp of Soy Sauce and 8 Tbsp of Olive Oil

PUTTING IT ALL TOGETHER:
Place all ingredients in a food processor, DO NOT PUT THE LAMB CHOPS IN THE FOOD PROCESSOR, and blend well. Marinate the lamb chops for at least 30 minutes in the mixture. (also can be marinated overnight)
There are a few ways you could cook these chops:
- Grill: Grill for 10-15 minutes, turning chops halfway through grilling. (optional-brush marinade over chops while cooking)
- Pan-Fry: Fry for approximately 20-30 minutes.
- Oven: Place in a baking dish and cook for 30-45 minutes in a 350 degree oven.
Medium-Rare Lamb Chops will temp at 125-130, use an instant read thermometer for an accurate temp reading.
Serves 2-3 people and goes great with steamed carrots and green beans.
