It has taken me a long time to get comfortable cooking fish. If I am truthful, I am still nervous each time I decide to make fish for dinner. But I do it because that's the way I was raised, fear is no reason to not conquer the obstacles in life. That is as long as we are talking about the dangerous stuff, like cliff diving or eating snails! So, let's put on our fish conquering caps and hit the kitchen.

What You'll Need:

4 6oz fish fillets, such as swordfish
or halibut or whatever is on sale.
1 whole lemon
1 Tbsp minced garlic
1 Tbsp oregano
1 Tbsp plus a splash of olive oil
1 Tbsp capers
4 artichoke quarters, not marinated
coarse sea salt and ground pepper

Putting It All Together:

preheat oven to 350 degrees
In a medium bowl mix together
the artichokes, juice from lemon,
garlic, oregano, capers and olive
oil.
lay out four pieces of foil big enough
to support fish, place a fillet on
each piece of foil and top with 1/4 of
the artichoke mixture. add salt and
pepper, fold foil into little pouches
and place on a baking sheet.(sometimes
I cut the lemon thinly and add a
couple of slices to the pouch)
cook 20-25 minutes
serve with rice
