Recipe Rescue: Fiery Chicken Balls!
What a handy goodie these awesome balls are. Read, Make and Enjoy… let’s get cooking!
Here’s what you’ll need: a package of of cornbread mix, or make your own if you have a great recipe… about 2 cups of cooked and shredded chicken (depends on how meaty you want them)… Franks Red Hot or your favorite hot sauce-a couple good shakes… 2 tsp of creole seasoning or 1/2 tsp of cayenne pepper… Optional add ins include a small grated onion and/or half of a red bell pepper diced finely.Oil for frying.
How to put it all together: make the cornbread as instructed on the package and add the chicken, hot sauce and seasonings. If you opted for additional items put them in now too. Make sure the batter is not too thick, if so add some milk or water or chicken broth. The batter should be similar to (average) pancakes. In a heavy pan heat oil and spoon in balls one at a time, be careful not to overcrowd the pot and let the oil warm a moment before starting a new batch.
Serve with waffle fries and a salad or just the salad or mac and cheese… use your taste buds to lead the way. To garnish the balls sprinkle with blue cheese crumbles and have a ranch or blue cheese dressing for dipping. I personally just like more hot sauce!
