Fajita's are such a perfect dish! You can give up the tortilla and have a great meal. You can load your tortilla with meat and veggies and cheese and oh my and have a great meat. The possibilities are endless. And when we can throw it all in the crock-pot for dinner tonight, well that just makes everything better. Let's hit the kitchen and start throwing our ingredients in our trusty friend: Mr. Crock-pot!

What You'll Need:

1 lb london broil, sliced in strips
2 medium or large onions, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
2 tsp minced garlic
1 tsp ground black pepper
1-2 tsp(s) cumin
1 tsp chili powder
1/2-1 tsp red pepper flakes
1-2 tsp(s) liquid smoke, optional
1 can petite tomatoes-don't drain
1 can low sodium beef broth
flour tortilla's, warmed
cheese and sour cream optional for
serving.

Putting It All Together:

put sliced London broil strips
into a medium bowl and mix well
with the garlic, pepper, cumin,
chili powder, red pepper flakes and
liquid smoke-if using, set aside
for ten to 30 minutes at room
temperature. (I like to let this sit
while I am slicing peppers)
put meat into the crock-pot, add
veggies, tomatoes and broth
set crock-pot on low and forget about
it till dinner.
serve with warm tortilla's, cheese and
sour cream, if desired.
