I have three favorite breakfast dishes, Eggs Benedicts, the Classic Breakfast and Huevos Rancheros. The idea to make Huevos Rancheros like this just popped into my head and they are so good. Easy and yummy, sign me up.

Scrambled eggs, large wonton wrappers, oil for frying, Monterey Jack cheese, refried beans, can of green chili and some good salsa


Lay out your wonton wrappers while your oil is heating to 350 degrees in a medium sauce pan. Start by spreading the refried beans on the wonton, topped with eggs, a little bit of salsa and finally the cheese. Wet all edges of the wonton with water, just use your fingertip or a small basting brush and fold the wonton up into the center, making sure that you have a secure seal all the way around. Now drop them one or two at a time into the oil (it all depends on the size of your pan/pot) they will turn golden brown and float when done, remove them and set on a plate lined with paper towels to drain the grease. Warm the green chile and ladle onto each bundle sprinkling with extra cheese and green onions if you like.
