Candied carrots are a great side that is earthy and sweet without being to much of either, as I think sweet potatoes can sometimes be. (unless you roast them and that recipe is coming soon)

WHAT YOU'LL NEED:

A bunch of carrots (chopped), 1/2 cup of brown sugar and 1/2 stick of butter

PUTTING IT ALL TOGETHER:

Cook the carrots in a pot of water until they become fork tender, drain the water and add the butter and brown sugar. Stir and taste. If you feel they could be more buttery add more butter, sweeter... add more brown sugar. For an added treat sprinkle with cinnamon before serving.
