I was so excited when I got home last night, dinner was already 95% done. I had started red beans in the crock pot that morning and now only needed to make the rice and dinner would be in the bag. This led me to think hey, "why don't I do this more often"?, use the crock pot that is. I then started to rack my brain and think of what I could put in the crock pot next. I search around the web a while and looked at pictures of food, I am strange, you can say it, and then I got it. Why not throw some chicken thighs in the crock with some, some, something and have dinner ready tonight?! Come on, let's head to the kitchen and get cooking.

What You'll Need:

6-8 chicken thighs
1 can condensed tomato soup
1 lg can crushed tomatoes
1 can low-sodium chicken broth
or a cup and a half of a dry white
wine
1 medium onion chopped
1 red bell pepper, chopped
2 stalks celery with leafy tops, chopped
1 Tbsp dried oregano
1 tsp minced garlic
s/p to taste

Putting It All Together:

the best way to do this recipe is to
dust the chicken lightly with flour
and brown before putting into the crock
pot, but sometimes you don't always have
time for the browning step and often times
the dish is still just as tasty.
line the bottom of the crock with the
chicken thighs, then the seasonings, the white
wine or chicken broth followed
by the veggies, the soup and the tomatoes
set on low and head to work
serve this with your favorite pasta or rice
and of course hot fresh bread
