There are few sweets that I enjoy, but a nice pastry with a cream filling is yummy. I have these a few times a year, but feel free to have them as often as you like. (just make sure you call me so I can join you when you make them)

HERE'S WHAT YOU'LL NEED:

1 8oz pkg cream cheese, 2-3 Tbs of Ricotta cheese, 2 egg yolks, 1 pkg of puff pastry (thawed), 1 lemon, 1/4 cup of sugar and seedless blackberry or raspberry or strawberry jam

PUTTING IT ALL TOGETHER:

Blend together the cream cheese and sugar till smooth (by hand or machine), Add the egg yokes, juice from half of the lemon, the ricotta and a dash of salt (you can also add a dash of vanilla if you'd like)  Roll out one pastry sheet with a little flour, just a couple rolls with a rolling pin in each direction and cut into squares, then take a nice spoonful of cream cheese mixture and place in center of square and top with tsp tip of jam (the jam is optional but adds a nice touch) pinching the opposite corners together. Now brush them with a little egg wash (one egg and 2Tbs Milk or Water) It would be best to put them in the refrigerator for at least 10 minutes and then bake at 400 degrees for about 20 minutes.
