Recipe Rescue: 12 Days of Christmas; Jingle Bell Pork

I’m calling this jingle bell pork because it makes me happy. This dish tastes like the season, warm and fulfilling. Let’s get cooking.

What You’ll Need:

1 Pork loin
1 Can of chicken broth, low sodium
4 medium apples, peeled cored and chopped
a bunch of carrots, peeled and chopped
1/2 stick of butter
salt and pepper

Putting It All Together:

put the carrots and apples in the bottom of a crock pot, add the chicken broth and the salt and pepper. place the roast on top of the vegetables and butter the top of the roast add more salt and pepper, cover and cook on low for 6-8 hours.
