Staring at the leftover meatloaf in the fridge the other night, I tilted my head like a dog trying to understand its owner and tried to figure out what to do with it, how to change it up... and look what I did!

My daughter, Natasha came over to try some new dessert recipes and she brought this big package of wonton wrappers... I don't know about you, but when the fryer is hot and there are wonton wrappers in the house... well, I just gotta find something to put in them... thus Double Down Meatloaf was born.

You start by cutting up your leftover meatloaf in 2x2 chunks, set a top wonton wrapper

then wet the edges and fold, my Natasha made a great egg roll shape, me, I just folded it in to fully wrap the meatloaf, be sure to wet all sides that need to stick together or it will open up on you

Gently place them in a fryer or heavy pot with oil to just cover the wontons. The oil temp should be around 350, keep an eye on the oil, if it starts to smoke, you're too hot... cook until the wonton is deep golden brown, remember the meatloaf is already cooked.

I set mine on a parchment paper covered baking sheet and threw them in the oven that I preheated to 425 while I heated up the left over mac and cheese and made some broccoli. They turned out crispy and delish! Enjoy!
