Consuelo’s Mexican Restaurant in Campus West in Fort Collins is Coming Down

The former home of Consuelo’s Mexican restaurant is coming down starting Thursday to make room for a new 7-Eleven and other retail stores.

The property at 1401 W. Elizabeth St., has housed a tire store, China Dragon and most recently Consuelo’s, which closed in November to concentrate on its Express store at the corner of Lemay and Riverside. The new Campus West building will be north of the existing building and will share parking with Campus West Liquors.
