We are always on the hunt for the best restaurants in Northern Colorado. I am thankful to live in an area that has such amazing choices. It is great to live in a place that can satisfy any craving. Plus, it is fantastic to live in an area where you can try new experiences as well.

Fort Collins' The Taco Stop Receives Accolade

You are missing out if you have not been to The Taco Stop in Fort Collins yet. I have gone many times. I typically get the Tacos Al Carbon, which is sautéed in guajillo morita salsa. I also believe that The Taco Stop's Nachos are the best in Northern Colorado. Hands down. It isn't even close.

The Taco Stop just made the list of USA Today's Best Restaurants of the Year for 2025.

The ranking pointed out that Mexico City inspires the Midtown Fort Collins restaurant. Chef Cesar Lopez was raised in the city and received his culinary education in the iconic food city.

The Taco Stop is a favorite amongst all Fort Collins residents. Cesar grew up in Mexico City and their other founder, Berenice Longoria was raised in Texas.

Their story is inspiring. The founders started the Taco Stop food truck in 2012, and grew into a restaurant and bar in 2020. The Taco Stop then overcame challenges from the pandemic and their business continues to thrive.
