Northern Colorado has seen some pretty cool things open up in 2026 so far. Here are just a few of the best businesses that have opened in Colorado so far this year.

In-N-Out

This pick has some pros and cons, but it definitely deserves an honorable mention. The good? The food is so good. Like, I could eat there every day. It's a problem for me. The bad is 100% the traffic.

Located in Timnath and sitting in the same complex as Costco, Freddy's, Taco Bell, Panda Express, and Dutch Bros, the space is only getting tighter and tighter. Wanna have a panic attack? Just hit that parking lot on a Saturday and watch your hair fall out in chunks.

Chelo's Modern Mexican

Timnath has seen a ton of openings this year, and many of them have been small businesses, which is very cool.

Chelo's is a new Mexican restaurant off of Harmony Road, also in Timnath. This place is legit, with authentic Mexican dishes and unique drinks from their massive bar; you can find something for everyone at Chelo's.

MINISO

While this new store in Fort Collins tucked into Front Range Village isn't my cup of tea, it definitely has a following. MINISO is the go-to place in Northern Colorado for Japanese-inspired toys, beauty products, home goods, snacks, and collectibles.

After opening at the end of February, the store seems to have found some success with Northern Colorado residents.

I haven't checked it out because I have a nine-year-old who is with me 24/7, and I can't handle bringing home yet another plushie.

These are only a few new joints in Northern Colorado that have opened in 2026.
