Recipe Rescue: Super Fast and Easy Shrimp and Vegetables
The greatest thing about this type of meal is that it's super fast and easy. Once the prep work is done, which is limited, the rest is a piece of cake, but it's shrimp and vegetables.
WHAT YOU'LL NEED:
1/2 pound of shrimp, cornstarch, vegetable oil, 1 small onion, 3 celery ribs, 1 bell pepper, fish sauce, soy sauce and Hoisin sauce
PUTTING IT ALL TOGETHER:
Rise and clean the shrimp, pat dry and place in a bowl with cornstarch. Shake them a little to get off excess cornstarch and cook in oil that you have heated to 350 in a medium sauce pan. They'll float in about 3 minutes or when they are done, remove them from the oil and place on a paper towel to drain excess oil from them. In a hot skillet add a Tbs of oil and add to that the celery, onion and bell pepper (that you have chopped) cook until they start to soften about 7 minutes and a couple of shakes of the fish sauce, soy sauce and a few more of the Hoisin sauce (something I also like to add is Sriracha, just a little it can get hot fast) let cook together for 3 minutes, add the shrimp, toss it all together and serve with rice!
