Lucy is my cousin in Colorado Springs and she is a fantastic cook with a warm heart and an amazing family. Recently we went to Guy and Lucy's house for a special celebration, they really know how to keep the family fed (thanks Shawn for the grand champ beef). Amongst the wide assortment of fresh salsa's, chips and more there it was, the most incredible shrimp pasta salad.

HERE'S WHAT YOU'LL NEED:

1 lb of pasta (I believe that Lucy used gemelli, a medium spiral pasta), 1 cup of Mayonnaise, 1 green pepper, 1 red pepper (both chopped) a little salt and a little pepper (that's what she said) and a lb or 1/2 a pound of shrimp (Lucy used medium shrimp, but I don't see why you couldn't use smaller shrimp or even cut them in half to save money)

PUTTING IT ALL TOGETHER:

Cook the pasta per the package instructions and set aside to cool (salt the water while cooking) mix together the peppers and mayonnaise, mix in the noodles, toss in lightly the shrimp and salt and pepper and chill for about an hour before serving.
