My friend Chris and I made these last weekend and they were so good. And as with any recipe, we started thinking of all the different ways that you could do them.

Bacon Wrapped Ranch Chicken with a Bite

We started thinking that we could make them smaller or add something to them. Initially we used half of a chicken breast and wrapped it with one slice of bacon. Now we are developing it even further. Ready, Set, Cook....

WHAT YOU'LL NEED:

4 Boneless/skinless chicken breasts cut in half (like a bagel-I saw that kind of description recently and thought that is a great way to describe how to cut them) Now, you could leave them cut in half or you could cut them in half again, but lengthwise this time. You'll also need about 4oz of cream cheese, 1 Tbs of ranch dressing mix (the powder-I usually have a jar of it in the cupboard and if you like a little stronger ranch flavor just add a little more of the dressing mix), half of a pound of bacon and 8 fresh jalapenos (cut in half, seeded-if you cut the chicken again lengthwise, cut the jalapenos in half cross ways)

If serving as dinner they would go great with some Basmati Rice and a garden salad.

PUTTING IT ALL TOGETHER:

In a small bowl cream together the cream cheese and ranch dressing mix. Stuff each jalapeno with the cream cheese mixture and set aside. Place your chicken pieces between wax paper and slightly pound out to thin. Now place a jalapeno in the center of the chicken piece and fold it into itself and wrap it tightly with a piece of bacon (or two), put on a baking sheet (you might want to spray the sheet) and put in a 425 degree oven for about 15 minutes or until the bacon is crispy and the chicken juices run clear. (if you wrap them tightly enough you shouldn't have to use toothpicks like in the picture)
