
This Denver Bourbon Brand Is Turning Heads in Colorado
As someone who is adventurous and loves a good sip of bourbon, I find myself in my favorite time of year. There is just something about a pour of bourbon when it's cold outside, and the fireplace is going strong. It's almost as if everything is right in the world.
Recently, I came across a new brand of bourbons and whiskeys out of Denver, called Onyx & Amber. I was instantly captivated by the label. It was refined, distinguished, and felt mysterious. It also reminded me of my first male German Shepherd, named Onyx.
From Whiskey Club to a New Whiskey Brand
Benjamin Rosen organized and ran a bourbon single-barrel club for nearly a decade, choosing over 150 barrels across the United States. After the COVID-19 pandemic, Rosen noticed the experience at distilleries changed drastically, with fewer barrels to select, higher prices, and lower quality.
Benjamin Rosen wanted to change that experience for bourbon drinkers. With that motivation, the whiskey club began the evolution into Onyx & Amber.
We wanted to being the power back to the consumer, allowing them to find high age/high quality whiskies at a price that they could actually stomach.

Located at 1330 Zuni Street, Unit J, in Denver, Onyx & Amber offers tastings of nearly every bottle available to purchase at the distillery. Guided tastings and tours are also part of the experience at the new Colorado whiskey tasting room.

Onyx & Amber Straight Bourbon Whiskey
Distilled in Indiana and bottled in Denver, this 111.6-proof bourbon is curated from a selection of 7- to 12-year-old barrels, then aged even further in Colorado, from six months to three years.

The nose on this bourbon features notes of violet and rose candies, with tones of light maple syrup and wood shavings, complemented by hints of leather, brown sugar, and a subtle hint of peaches.
Onyx & Amber's Gobstopper Bourbon
The bottle that has captivated my attention the most since following Onyx & Amber on Instagram is the Gobstopper. This 10+ year old bourbon is finished in a W.L. Weller cask for six months, producing a nice, wheated balance. This will surely be one of the bottles I will try my hardest to get for my own personal collection.
