New Restaurant in Severance Mixes Family Recipes and Modern Style
You now have another place to get tacos, burritos, nachos, appetizers, margaritas and other drinks in the town of Severance.
Christopher Allison and Josh Ball opened Rojitos Modern Mexican Cantina in November at 385 W. 4th Avenue in Severance. For years Ball and Allison have been co-owners of the Roma restaurants in Windsor, Greeley and Evans.
After years in the restaurant business, Ball and Allison began to think about something new. They wanted to "serve hungry customers in northern Colorado but do it in a whole different way, with a completely different concept and menu and in an entirely new town."
Estrada said this to the Greeley Tribune:
It kind of started as us just joking around with this idea. It eventually just grew to something we could actually get into.
Rojitos general manager is Alex Estrada, a longtime Roma employee. Estrada's red hair is the inspiration for the name “Rojitos," a spanish term that means "little red."
Estrada's long-time family recipes are the inspiration for Rojitos menu. Ball told the Greeley Tribune about it:
We have his grandma’s green chile, we have his grandma’s rice, we have his grandma’s chile Colorado. We wanted to be traditional with our meats but also modern with our style.
Rojitos is open 11 a.m. to 9 p.m. Monday - Sunday.
