The old Fish restaurant has gone French in Old Town Fort Collins.

The new restaurant Bistro Nautile opens on Monday (June 15).

The French-influenced bistro is owned and operated locally by three Fort Collins restaurateurs. Kat and Mike Reeves, who owned Fish, have partnered with past Fish head chef Ryan Damasky.

Damasky, also a former chef at The Stanley Hotel in Estes Park, is now equal partners with the Reeves, according to the Coloradoan.

Chef-owner Ryan Damasky said he works with a variety of local vendors to provide the freshest seafood possible, Colorado Certified Angus Beef, Colorado poultry and local eggs, greens and vegetables.

Join Bistro Nautile for their grand opening on Monday from 4-8 p.m. at 150 W Oak St. in Fort Collins.
