
Fort Collins Getting New Bakery – Who is ‘Trickster?’
It's always kind of exciting to find out about a new "foodie" place opening in Colorado. Fort Collins will be welcoming a new bakery where a Pizza Hut used to be; while many love pizza, some croissants sound good, too.
Whos Is the New Bakery Coming to Fort Collins in 2026?
According to The Coloradoan, Trickster Bakery & Cafe will be the name of the new place going in at Lemay Avenue, just north of Elizabeth. There was a Pizza Hut at the location forever, but it closed in May of 2026. I used to dine at that Pizza Hut after a doctor visit, as it was right by Family Medicine Center.

Two woman co-own the bakery/cafe (breakfast croissants, muffins, etc.) one (according to The Coloradoan) attended pastry school, and always wanted to open a little bakery/coffee shop. It's great to see someone pursue their dreams into a reality; much like myself always wanting to be a radio D.J.

What Is With the 'Jackalope' in the Trickster Logo?
Trickster's logo is a jackalope in the night sky; The Coloradoan's article doesn't get to the bottom of the intriguing figure. Maybe it has something to to with the co-owners perhaps being from the Douglas, Wyoming area, where the myth began, way back in 1930. Douglas takes the myth of the jackalope very seriously.
Either way, it's going to be much different from when you'd be walking into that Pizza Hut: Less smells of pepperoni and more smells of fresh baked goods and fresh coffee.
