It's fun when a new food/drink "fad" makes its appearance in Northern Colorado. While "soft serve margaritas" haven't been on the scene for very long, at least two restaurants around Fort Collins have them, ready for us to enjoy.
What Exactly is a Soft Serve Margarita That Northern Colorado Now Has?
I hadn't heard of this "soft serve margarita" until I saw them popping up on the Facebook feeds of a couple of Mexican restaurants around Northern Colorado. They're alcoholic, creamy, swirly margaritas; it's a lot like looking at soft serve ice cream. They became wildly popular in 2026 thanks to going viral on Tik Tok.
Margaritas are the most popular of cocktails in the world, why not find a way to upgrade them? Hard to deny that it's a great way to get people in the door to try one out, and hopefully stick around for a meal.
What Places in Northern Colorado Have Soft Serve Margaritas?
It was in early May that I saw Cactus Grille in Loveland bragging that they had Loveland first "soft serve margaritas; people, indeed, were excited about it: People kept tagging friends of theirs to get in there and have one.
The soft serve margartitas were also found at Cactus Grille's sister bar, Wicked Tequila Room.

Then, in early June, Luna's Tacos & Tequila began teasing "something new" just in time for patio season; a few days later they launched their "soft serve margaritas."
