P.F. Chang’s Is Finally Opening 9th Colorado Spot
There's just something about that Asian-fusion cuisine that many Coloradans enjoy; whether it be for a date-night, or large celebrations. Folks in the north Denver area have been waiting for one spot to open; by Halloween, the wait will be over.
P.F. Chang's has been in Colorado since 1994, when they came to Littleton. Just over 10 years later, they'll have nine in The Centennial State. I've been to the Loveland location at the Promenade Shops at Centerra a few times; it's a fun place to hit up during the holidays. It reminds me of "The Christmas Story," when they go out for dinner.
What was once a Mimi's Cafe at The Orchard Town Center off of 144th and Delaware in Westminster, is the latest Colorado spot for P.F. Chang's, which got its start in 1993, in Scottsdale. Today, there are over 300 locations across the world; it's a great American success story; the Westminster location will draw many in from the north Denver metro area. There are three in the Denver area, but they are south of I-70.

It seems like this particular P.F. Chang's was never going to open. In 2020 things got underway, then stalled. In the summer of 2024 it looked like they might open by the end of that year, but no. A year later, they announced that it it would definitely be open on October 29, 2025. P.F. Chang's is one of about 30 places to grab a bite at The Orchard Town Center, ranging from small sandwich shops to high-end dining options.
