Right before Christmas, someone brought cookies or candy or some kind of goodies into our office to share. It added to my girth and added a smile to my face.  I love sweets. Our friend Caitlin is an excellent baker.  She even beat me recently in a chocolate chip cookie bake-off. Caitlin brought in an entire basket of cookies to share with the staff.  All of the cookies were wonderful, but I did have a favorite. You can see them in the bottom left of the picture above.

I never dreamed my favorite would be something that doesn't have any chocolate in it. My name is Todd and I am a choco-holic. The best cookie Caitlin made was lemon flavored. Lemon??? Yes lemon. I was surprised too. Even though they were a Christmas cookie, you can make them any time and they are just as wonderful. Thank you for the recipe Caitlin.  They are out of this world.

HERE IS WHAT YOU WILL NEED TO MAKE THEM

  • 1 box of Lemon Cake Mix w/ Pudding in the mix
  • 1 large egg
  • 1 container of Cool Whip
  • 2 Tbsp Powdered Sugar

Combine cake mix, egg and container of Cool Whip until well mixed (batter will be VERY sticky!) Spoon batter into a bowl of powdered sugar and roll into ball. Bake at 350 degrees for approx 10-12 minutes or until cooked through. The cookies will most likely be flat, but I found that cooking them on parchment paper puffs them up better for some reason. They cook faster on the parchment as well, so be careful!
