Known for putting their own tasty twists on a classic breakfast food, The Waffle Lab makes their way around Fort Collins in their snazzy four-wheeled food trailer, serving up extremely delicious and gourmet waffle creations to visitors who stop by. 

While the Waffle Lab truck spends a lot of time parked at a convenient location on the corner of College and Walnut in Old Town, without looking online, it can be difficult to find out where they are going to be on the days when they're on the move. However, come January, hungry breakfast lovers will have to search no more, as the Waffle Lab has set plans to move into an actual brick and mortar location on Olive Street in Old Town.

The owners of the food truck have been on a quest for the past two years, searching for the perfect permanent location in Fort Collins to set up shop. Though none of the previous restaurants site plans have worked out, they have now finally found a great little spot, neighboring Hops & Berries, to act as their waffle home base. The 1,600 square foot space that they have chosen will be undergoing construction during the next few months, as they completely redo the restaurant's dining area and also majorly upgrade the kitchen.

In addition to offering their very creative, sweet and savory waffle concoctions and hefty beer brats crafted from using local beer, the owners are in the works of expanding their menu to also include a variety of salad and sandwich options. Furthermore, they will be adding more types of coffee and espresso drinks, and are looking into getting their liquor license so that they can sell alcohol and offer happy hour specials to customers.

The original food truck will still be making appearances at festivals and special events in town once the actual restaurant is running and open for business, and weather permitting, will continue to operate through the fall.
