Brian and I are NASCAR fans.  We are not hard core, but we follow the Chase for the Sprint Cup every year. One way we make the season more interesting is something we invented along with our buddy Tracy Walker. It's called the NASCAR Dinner! This year's dinner was held at PF Chang's China Bistro at Centerra.

Here is how it works:   Every week we each pick a NASCAR driver that we think will win the race.  Whoever has the driver that finishes best gets 3 points.  2nd gets 2 points and 3rd gets one point. We add up the points at the end of the season and the winner and his wife get treated to dinner by the other 2 couples.

Tracy was the winner we were honoring last night. He chose PF Chang's as the restaurant and we were glad he did.  It was amazing. We all left the restaurant fat and happy.  We started out with 5 appetizers.  We had 2 of the deservedly famous Chang's Chicken Lettuce Wraps.  Delicious!  We also had 2 orders of the Salt & Pepper Calamari, which is some of the best in Northern Colorado.  We also had my wife's personal favorite, the deep fried green beans. Hey, you have to fit the green vegetables in there somewhere.

We all like to share, so we ordered several entrees and passed them around.  My favorite was the Mongolian Beef.  I don't know how they make beef crispy, but Chang's did it beautifully.  We also had the very spicy, but tasty Dali Chicken, the Shrimp with Candied Walnuts, and the Kung Pao Scallops. It was all so good we stuffed ourselves beyond a reasonable comfort level and waddled out to our cars.

It was a great night with great friends at a great restaurant. Before we left, we congratulated Walker again and called it an evening.  If you need a spot for your NASCAR Dinner, I would recommend PF Chang's China Bistro.
