Eggs are a most have in Taylor's fridge and in mine. I love eggs, baked, fried, scrambled, poached, hard boiled and any other way you can think of, well not raw in a "Rocky Balboa" kind of way.

WHAT YOU'LL NEED:

1 Dozen eggs, 4oz of cream cheese (cut in small slices for easier melting), 1/2 a cup of Swiss cheese, 1/2 cup of Cheddar, 1/2 cup Monterey Jack (if you'd like less cheese, cut the amounts down to 1/3 cup each or eliminate a cheese) a bunch of green onions, butter and 1lb Kielbasa Sausage.

PUTTING IT ALL TOGETHER:

Start with the Kielbasa Sausage, cut into bite sized pieces and brown in a skillet, cover and set aside. If you want bread, I love English Muffins, grab one of the kids or your spouse and have them start putting it down in the toaster and let's cook the eggs. My trick, I use a sauce pan verses a skillet, deep sides help me make fluffier eggs. I crack all of the eggs in the pan with about 2 Tablespoons of butter, break the yokes, beat a little in the pan and add two Tablespoons of water. I then start adding the cheese, begin with the cream cheese, wait about a minute and then start adding the other cheeses, they will melt fastest if they are grated, but often times I just tear slices and fold into the eggs. As the eggs start firming up, not too firm, remove from heat. Place them on a platter, top with more cheese, I usually just do a shredded cheddar on top and then add sliced green onions.
