“Taste Of Home” Mango Lime Pie Will Warm Your Taste Buds
The Taste of Home Cooking school is going on tonight at the Lincoln Center in Fort Collins and it will be a culinary delight. There will be demonstrations and sampling and smells to make you drool. One of the tasty treats to be prepared will be a mango lime pie. I will share the recipe with you so you can practice. I know I am whipping one of these up this week. Here is what you will need.
1 store bought graham cracker crust
3 cups chopped mango, fresh or frozen and thawed
1 tablespoon lime zest
1/4 cup lime juice
1 14oz can sweetened condensed milk
1 1/2 cups heavy cream, chilled
1. Blend the mango, lime zest, lime juice and sweetened condensed milk in a food processor until smooth,
2. In a separate bowl, whip the cream with an electric mixer until stiff peaks form. Fold the cream into the mango mixture with a spatula.
3. Spoon the filling into the graham cracker crust and freeze, covered, for 3 hours or until firm.
4. Let sit at room temperature for 30 minutes before serving.
