They say breakfast is the most important meal of the day. Well, the Fort Collins restaurant scene seems to agree; and that makes those of us who live there some lucky folks!

The Original Pancake House is now open in South Fort Collins, next to Fuzzy's Taco Shop on Harmony Road, the Coloradoan reports.

The menu includes more than 20 pancakes: (founder Erma Hueneke's) specialty, the Dutch Baby; a house apple and cinnamon; and everything in between from potato to cornmeal.

The rest of breakfast is covered, from eggs to crepes and thick-cut sides of honey-cured bacon. Orange juice is fresh-squeezed, and the coffee comes from Portland-based Boyd roasters.

Food is made fresh to order, with everything from whipped cream to pancake yeast being made fresh in-house (that's right, they're growing their own yeast).

Sounds like another great breakfast place for Fort Collins to add to its repertoire, don't you think?
