Recipe Rescue: This Veggie Burger Will Knock your Socks Off!
My dear friend Lindsey loves to cook and when she hits her target on flavor, she wants to share her finding’s. I am grateful for her as a friend and an amazingly creative vegetarian.

WHAT YOU’LL NEED:
1 15 ounce can of black beans (rinsed and drained), 1/4 cup quinoa, 1/2 cup water 1/2 cup bread crumbs, 1/4 cup minced yellow bell, 2 Tbs minced onion, 1 large minced garlic clove, 1 1/2 tsp ground cumin, dash of salt, 1 tsp hot pepper sauce (your favorite, like Chalula), 1 egg and 3 Tbs olive oil
PUTTING IT ALL TOGETHER:
cook the Quinoa with the water, first bring to a boil and then let simmer for about 15 minutes or until the Quinoa absorbs the water, remove from heat and set aside, in a bowl roughly mash the black beans with a fork, then add the Quinoa, bread crumbs, bell pepper, onion, garlic, cumin, salt, hot sauce and egg-mix till blended with hands. Form the mixture into patties (about 4 or 5), heat the oil in a large skillet and cook the patties until heated through, roughly 2-3 minutes on each side.
Serve these as you would a burger with or without a bun and lettuce, tomato and avocado. Yum!

The Greeley Stampede is coming up, and you know what that means. Corndogs, cowboy hats, concerts, and cars. One of the best parts of the 10-day festival is the demolition derby. Hundreds (yes, hundreds) of drivers will partake in the destructive chaos. This year's demolition derby will take place on July 7th at 2:00 PM, and tickets cost $20-25.
