I have only eaten these guys for a few months, I found a place that has great Thai Basil Chicken Wings and then started experimenting at home. Here's what we have so far.

WHAT YOU'LL NEED:

10 Chicken wings, 3 cloves of garlic (minced), 2 shallots (diced), 1 Tbs of fish sauce, 1 Tbs plus 1 tsp of soy sauce, 2 tsp of honey, handful of fresh basil and 3 red chili peppers (birds eye if you can find them, I just use what I can find and you can increase the number of chili's depending on how spicy you like it)

HERE'S WHAT YOU DO:

Put garlic, chili's and shallots in a mini chopper and chop till they form a paste.  Heat the oven to 425 degrees and bake the chicken wings for about 30 minutes or until crispy. (you can fry them if you wish) Heat a saute pan, add oil and the garlic paste, cook until it begins to break down and smell delicious then add the wings. Add the soy sauce, fish sauce and honey, keep turning the wings until they are coated. Now throw in your basil leaves, let cook for maybe a minute or until the basil starts to wilt.
