Recipe Rescue: Tasty Potato Cakes
Potatoes should be on the menu 5 out of 7 days they are so yummy. How do you make your potatoes… boiled, fried, mashed… it’s all good. I think that you will like these tasty potato cakes, they go with everything.
WHAT YOU’LL NEED:
4 cups of cooked and mashed potatoes-DO NOT ADD MILK, 4oz of cream cheese (room temperature), 1/2 cup sour cream, 2 green onions (minced/chopped fine), half of a stick of butter, 1 egg and a little olive oil for frying
PUTTING IT ALL TOGETHER:
Mix together the cream cheese, sour cream, green onions and egg. Now mix in the mashed or smashed potatoes, folding the potatoes till they are well blended with the cream cheese mixture.refrigerate potato mixture for 15 to 30 minutes
-Tasty add-in’s include your favorite cheese, a packet of onion soup mix or a packet of ranch dressing seasoning.
Remove mixture from the refrigerator and form 3 inch balls, heat olive oil in a cast iron skillet (if you have one-any skillet will do), add enough balls to the skillet without crowding them, usually about five, maybe six will comfortably fit. After about a minute, squish the balls down with your spatula and cook another 3 minutes or until golden brown and carefully flip them over and cook for another 3-4 minutes
These potato cakes go well with ketchup or gravy… some people would just smother them in sour cream… anyway you do it they will be yummy.
