Recipe Rescue: Stuffed Zucchini Makes a Great Meal
By now you are likely swimming in zucchini and regretting putting in more than 2 zucchini plants. After all there is only so much grilled zucchini, zucchini chocolate cake and raw zucchini in your salad a fella can take. Stuffed zucchini is pretty easy and really good.
WHAT YOU’LL NEED:
1 lb of Italian ground sausage, 1 15oz can of tomato sauce, 1 small onion (diced), 1 Tbs of Italian seasoning, 1 cup Italian bread crumbs, 1 cup of three cheese blend, 1 egg, 4-5 zucchini
PUTTING IT ALL TOGETHER:
Cut the zucchini in half lengthwise and scoop out the seeds and “meat” till you have little boats (discard seeds and chop the “meat” or zucchini pulp), brown the sausage halfway through throw in the diced onion and set aside to cool. In a medium bowl mix together the zucchini, egg, bread crumbs, Italian seasoning, cooled sausage and onion mixture and add a couple Tbs of the tomato sauce, maybe a little more. Place the zucchini in a baking dish and cover with remaining tomato sauce, bake uncovered at 350 for about 20 minutes, top with cheese and cook for 5-7 minutes longer. (zucchini should be tender)
