Side dishes throw me for the biggest loop ever... I can easily figure out the star of the meal, usually chicken and can come up with a starch (because that's my favorite part of the meal) but a side dish... a cool and tasty side dish not just opening a can or bag of veggies or throwing green beans in a skillet till their tasteless. But now my side dish dilemma, at least one, is solved.

I had this salad at a potluck I went to Tuesday night. I am not 100% sure what was all in there, but I think that I got this. I did ask about the dressing in the salad and was amazed at how simple it is.... ready, set, let's get cooking

WHAT YOU'LL NEED:

3 fresh broccoli heads or about 5-6 cups of broccoli crowns (chopped with no stems), about 4 pieces of cooked bacon, 2 cups of red grapes (cut in half), 1 cup of mayonnaise and 1/4 cup of sugar (mix together the mayonnaise and sugar)

PUTTING IT ALL TOGETHER:

In a medium bowl add the chopped broccoli and bacon, mix in the mayonnaise mixture and toss till the broccoli is well coated then fold in the grapes, lightly mixing them into the salad. If you like top with Almond slivers

Enjoy! ( I love potlucks!)
