Time and time again I go back to the drawing board for something simple and tasty for dinner and time and time again, I reach for the crock-pot. With kids in sports and clubs its hard to get enthusiastic about standing in the kitchen for over an hour making a great meal that no one will be home to eat. No matter how much I enjoy cooking sometimes its a let down when dinner gets postponed because someone is running late. The crock-pot affords me to make a great meal without all of the hands on time, giving me a chance to meet my James for coffee instead.

2-4 boneless skinless chicken breast,
cut into bite size pieces
(all depends on how meaty you want it,
often times in stews I lean towards less
meat)
1 medium onion, chopped
2 carrots, chopped
2 celery stalks, chopped
3 medium turnips, chopped3 medium potatoes, chopped
2 14 oz cans low-sodium chicken broth
1 can cream of chicken soup
plus half a can of milk or cream*
1 tsp coarse salt
1 tsp ground pepper
3 garlic cloves, whole
1 Tbsp dried parsley
2 Tbsp unsalted butter

*add the cream in the last half hour

Putting It All Together:

put the chicken pieces in the bottom
of the crock-pot top with the butter
and season with salt and pepper
add onion, carrots, turnips, potatoes,
celery, garlic and broth and soup top with parsley cover and cook on low for 8 hours, add the cream and stir let cook another half an hour, stir again and serve with your favorite bread.
