Recipe Rescue: Mothers Day Breakfast in Bed

If the kiddos are little, dad, don't worry you got this! I have come up with the simplest breakfast to wow mom and not stress the family. Now the only problem is actually keeping mom in bed.

Stop biting your nails dads and kids, YOU CAN DO THIS! The hardest thing will be keeping mom in bed, so I suggest you send the youngest to cuddle with mom and put "P.S. I Love You" in the DVD player while the others and dad make breakfast.

HERE'S WHAT YOU'LL NEED:

A pkg of bacon, moms favorite cheese, salt and pepper, 12 eggs (or less depending on your family), butter, assorted fruit and toast

PUTTING IT ALL TOGETHER:

On a microwave safe plate lay out two paper towels folded in half and layer with bacon, keep doing this until you have used all of the bacon and microwave for about 5 minutes (the bacon shouldn't be too done or too undone-if it is white and flabby put it back in for a couple/2 minutes, if its too crispy-well just deal with and move forward mom knows you're not a gourmet chef-:P) Once the bacon is done line each muffin hole in a muffin pan (that's the pan in the cupboard that has 12 holes in it -typically) with the bacon, kind of wrap it around the hole, lining the sides and leaving a hole in the center. Oh, did you turn on the oven? Stop doing this and go do that, set it in bake mode to 400. Now, crack one egg in each muffin bacon hole, sprinkle with a little salt and pepper and then top with cheese. Put the muffin pan in the oven for about 15 minutes, any longer and you might as well get mom up and go play yard games with them.

Now while the eggs are in the oven gather your fruit, berries, cantaloupe, watermelon-whatever you got and put someone on toast duty, you'll need at least 6 pieces of buttered toast, put the butter on the bread after it pops up out of the toaster or is browned in the toaster oven. Then using the same butter knife you buttered the toast with cut the toast at a diagonal.

Put two egg cups on each plate, some fruit and toast. If mom likes coffee, I hope someone thought to make it or dad ran to the coffee shop. If not pour some juice, no juice, she'll appreciate water.
