Recipe Rescue: Mac and C, a Twist on the Original
Check this funky recipe out, my James has dubbed it Mac and C, it's a twist on traditional mac and cheese.
WHAT YOU'LL NEED:
1 head of cauliflower, 1 cup cooked macaroni noodles, 1/4 cup Gruyere cheese, 1/2 cup Velveeta cheese and 1/2 cup of blended cheddar cheese, 1Tbs butter, 1 tsp chicken base, s/p and 1/4 tsp cayenne pepper
PUTTING IT ALL TOGETHER:
Wash and chop the head of cauliflower and put in medium sauce pan with about a cup of water, cook covered on medium heat until the cauliflower is fork tender. Leaving the water in the sauce pan mash the cauliflower with a potato masher until it is creamy and add all other ingredients, mix well and continue to cook on low until the cheese is melted (stir often) Put the Mac and C in a 9 x 9 baking dish (I coated mine with cooking spray), top with a little extra cheese (I used the cheese blend for this) and bake at 350 for 20-30 minutes. If you like the cheese a bit more browned try turning on the broiler on high for a few minutes, but keep an eye on it.
