I love lasagna, but rarely make it. It can be fattening and a lot of work, but this recipe is simple and less heavy on the thighs.

WHAT YOU'LL NEED:

1 lb of ground turkey, 4 zucchini (cubed), 1 8oz pkg of Italian cheese (or just mozzarella), 1 large can of tomato puree,1 medium onion (diced) 1 cup of low fat cottage cheese,  1 Tbs of Italian seasoning or a mixture of garlic powder, oregano, parsley and salt. You will also need 2 cups of cooked pasta, I like to use bow tie pasta or a shell, you could even use lasagna noodles, but only a few (if you want to keep this light) Olive oil for cooking

PUTTING IT ALL TOGETHER:

Brown the ground turkey with a little olive oil and the diced onion, throw in the cubed zucchini and sprinkle the whole dish with the seasoning(s), cook for 1 minute (add a little more olive oil if needed) then add in the tomato puree. Let simmer for 5 minutes. In a baking dish add half of the meat mixture, all of the cottage cheese, half of the cheese and 1 1/2 cups of the cooked noodles, now add the rest of the meat mixture, top with the left over noodles and cheese. Cook in a preheated 350 degree oven for about 20-30 minutes. Enjoy!
