Recipe Rescue: Fourth of July Potato Salad
Backyard bbq's aren't complete without potato salad. Here's a potato salad recipe fitting for a grand Forth of July celebration.
WHAT YOU'LL NEED TO MAKE FOURTH OF JULY POTATO SALAD:
- 6 red potatoes, unpeeled
- 2 stalks of celery, chopped
- 1 small/medium red onion, chopped
- 3 hard boiled eggs, chopped (optional)
- 1/3 cup of mayo or non-fat Greek yogurt
- 1 Tbs of yellow mustard
- 1 Tbs of red wine vinegar
- 1 tsp of salt, pepper, celery seed and dried dill
PUTTING YOUR FOURTH OF JULY POTATO SALAD TOGETHER:
- Cook (boil) and cube potatoes
- In a large bowl, mix together the mayo or yogurt, mustard, vinegar and the seasonings
- Add the onion, celery and potatoes and mix together gently, almost like tumbling (you don't want to break down the potatoes)
- If you are opting to add the eggs, add them now, saving a few to garnish the salad. When adding the eggs, again do this gently, fold them into the salad.
